Callaloo Amaranth Story
Amaranthus tricolor or red veined amaranth is an up and coming vegetable and superfood. Which is why we selected it for your garden. This plant's name comes from the Greek word amarantos which means “the never-fading” because its vibrant colors last long after harvest. This variety is one of the most colorful varieties of amaranth. It has forest green leaves with burgundy veins and underside. The leaves can be cooked much like spinach and are a staple in the caribbean dish Callaloo.
