Rumex sanguineus, or sorrel, is a leafy green that comes from the grasslands of Europe and Central Asia. The lush green foliage is known for two things: its unique flavor and vibrant color. This variety of sorrel is called the red-veined sorrel. It has lime green leaves with a deep red color that flows through them. Another beautiful aspect to this plant is the distinctive taste. When you bite into its leaves, you experience a blast of lemony flavor. This makes sorrel perfect for adding it raw to your salads, smoothies, and sandwiches when the leaves are young. When the leaves are bigger and more mature they are perfect for cooking. It can be cooked like spinach but will still maintain its excellent citrus flavor. Red -veined sorrel is also in essiac tea that is often used as an alternative cancer treatment. No matter how you use your plant it is best when harvested when the leaves are 2-3 inches. This ensures tender leaves and a vibrant flavor.
