Smoky Grilled Black Bean Burgers

Ingredients

  • 1 tbsp olive oil
  • 1 cup yellow onion, chopped
  • ​​2 cans black beans (14 oz), drained, rinsed and patted dry
  • 1 cup yellow onion, chopped
  • 2 orange snackable peppers, chopped
  • 1 jalapeno pepper, chopped
  • 3 garlic cloves, minced
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (but regular paprika will do fine)
  • 1/2 cup bread crumbs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 large eggs
  • 3 tbsp smoky BBQ (we used Lilli’s)

Topping Ideas:

  • Pepper jack cheese
  • Artisan buns
  • Sliced white red onion
  • Mashed avocado
  • Mayo

 

Directions

  1. Step One: Pre-heat oven to 325*F. Line a baking sheet with parchment paper. Spread the bean out evenly and bake for 17 mins or slightly dried out.
  2. Step Two: While beans are drying, saute the vegetables. In a skillet on medium heat, add olive oil and saute the chopped peppers, onion and garlic. Cook until the onion is translucent. Line a small bowl with a paper towel to absorb excess moisture and place the pepper and onion mixture in the bowl to cool.
  3. Step Three: Once beans and mixture are cooled (5-10 mins), place all of the burger ingredients into a food processor and pulse together about 4-5 times or until the mixture has come together. Some smaller chunks of beans are ok.
  4. Step Four:  Form the mixture into patties. Using a measuring cup, gently scoop 1/2 cup and make into patties. Repeat 4 times. There may be a little extra for a mini burger!
  5. Step Five: Fire up your grill on medium high heat, place a sheet of aluminum foil on the grill, spray with cooking spray (or grease using olive oil). When the grill is ready (about 350*F), place the burgers on the grill and cook for 8 minutes, flip and cook for another 8 minutes. When there’s 2 minutes left, add the pepper jack cheese slices to the burgers. Remove from the grill.
  6. Step Six: Assemble the burgers and serve!
