Garden Fresh Symphony Salad
Hosting this summer? Try this easy, delicious salad submitted by Rise grower Lia. It's a colorful and refreshing option that everyone will love!
- Ingredients:
- Rise Gardens Red Veined Sorrel
- Lettuce
- Yellow Cherry Tomatoes, halved
- Baby Cucumbers, sliced
- Sugar Snap Peas
- Bacon Bites
- Vinaigrette of your choice
- Instructions:
- Prepare the Greens: Rinse and dry the red veined sorrel and lettuce from your Rise Garden.
- Combine Ingredients: In a large bowl, mix the greens with halved cherry tomatoes, sliced baby cucumbers, sugar snap peas, and bacon bites.
- Dress It Up: Drizzle with your favorite vinaigrette and toss gently to combine.
- Serve: Enjoy this garden-fresh symphony of flavors and textures!
Peach Caprese Salad
Celebrate summer with this fresh and juicy Peach Caprese Salad. These sweet peaches pair perfectly with greens, mozzarella, prosciutto, fresh basil, and a balsamic glaze.
- Ingredients:
- 4 Peaches, thinly sliced
- 2 tbsp Olive Oil
- Juice from a Lemon
- 1 Head of Alfresco Mix Lettuce
- 6 oz Mozzarella Pearls or Mini Balls
- 2 oz Prosciutto, torn
- 2 tbsp Balsamic Glaze
- 12-15 Basil Leaves
- Sprinkle of Sea Salt, to taste
- Instructions:
- Prepare the Lettuce: Rinse and dry the alfresco mix lettuce from your Rise Garden.
- Combine Ingredients: In a large bowl, mix the lettuce with thinly sliced peaches, mozzarella pearls, and torn prosciutto.
- Add Basil: Tear the basil leaves and scatter them over the salad.
- Dress It Up: Drizzle with olive oil, lemon juice, and balsamic glaze. Sprinkle with sea salt to taste.
- Serve: Enjoy this sweet and savory peach caprese salad that's perfect for summer.
Grilled Kale Caesar
Kale is a tough but versatile green! Soften it up by grilling it for this unique twist on a classic Caesar salad, submitted by Rise grower Amy. The grilled kale adds a phenomenal texture, complemented by an anchovy-free Caesar dressing.
- Ingredients:
- Rise Gardens Starbor Kale
- 2 tbsp Olive Oil
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 1 cup Cherry Tomatoes, halved
- 1 cup Crispy Chickpeas
- 1 large Avocado, sliced (optional)
- Instructions:
- Grill the Kale: Toss the kale with olive oil, salt, and pepper. Grill over medium heat for 2-3 minutes per side, until slightly charred and softened.
- Prepare the Tomatoes: Halve the cherry tomatoes.
- Combine Ingredients: In a large bowl, mix the grilled kale with halved cherry tomatoes, crispy chickpeas, and sliced avocado if using.
- Serve: Enjoy this crunchy and flavorful grilled kale Caesar salad.
